Eggplant and Camote Tops with Panbroiled fish

Yesterday I was so engrossed with cleaning our bedroom cabinet that it was already lunch time and there's only steamed rice prepared for lunch.

I checked the freezer and there's only two slices of tanigi (Spanish Mackerel) left and a few slices of pork.  I decided to cook the fish because it is easier and faster to prepare.

Without any seasoning, I pan broiled the fish for just a few minutes.  In a separate pan, I boiled a small amount of water then I added tomatoes, onion, eggplant and the pan broiled fish.  I seasoned it with salt and a little fish sauce before covering the pan.  After a few minutes, the eggplant was done so I added the camote tops after removing the pan from heat.  This way, the camote tops won't be overcooked.

This dish was usually cooked by my mother when I was young except that she don't broil the fish.  Other vegetables can be used such as ampalaya (bitter gourd), malunggay, pechay or other green and leafy vegetables.


In less than 15 minutes I have prepared a simple yet nutritious dish.

A night without my husband and daughter

My mother-in-law wanted to take a vacation here in Manila so this morning my husband together with my daughter went to the province to fetch her.  It's only a 4 hour drive from here to their province but I don't want them to travel at night so it is better for them to stay there for a night and travel again tomorrow.

As far as I can remember, this is the first time that my children were away from each other for the night.  They are used to seeing, playing and fighting each other before going to sleep so tonight is a different night for them and also for me.  It's a quite night...no shouting, laughing or crying.  I don't have to play referee either.  But I admit it, I miss the noise and it is much better that way.

Before my son went to sleep he asked me if he can play first with his new found toy... the ice drop sticks.  I just let him play so he would stop asking when his father and sister will arrive.  He said he miss them already.

A Teacher's Link Exchange Project

I was blog hopping when I stumbled upon Ms. Vernz "Petty Things in Life" Blog.  What caught my attention is her "A Teacher's Link Exchange Project".  In her project she will collect all blogs who wanted to exchange links and at the end of the project she will collate all the links and send it to all who participated in the project.  This way we can make a number of link exchange in one sitting.
